Sizzling Snapper Sauté
Ingredients
1 medium onion, cut in half and sliced 
6 medium cloves garlic, pressed
1-2 tsp minced jalapeno pepper, seeds removed, or to taste
1 tbs chicken stock
2 cups diced zucchini
Roughly 500 grams snapper filet cut into cubes
1 can diced tomatoes
3 tbs fresh lemon juice
2 tbs chopped fresh coriander
1 tbs chopped fresh oregano
1 ripe but firm medium avocado, diced
Sea salt and black pepper to taste

Directions:
Prepare all the ingredients before starting the sauté.
Heat 1 tbs stock in a pan.
Sauté onion in stock over medium heat, stirring frequently for 5 minutes.
Add garlic, zucchini, jalapeno, and continue to sauté for another 2 minutes.
Add snapper and continue to sauté for another 2 minutes.
Add rest of ingredients, except avocado, and cook for another 2 minutes.
Top with sliced avocado, season with salt & pepper and enjoy!

Fish Tacos
Ingredients

Select your favourite WA Market Fresh Fish fillets
Juice of 1 lime
2 garlic cloves crushed
!/4 tsp ground cumin and a dash of chilli powder
1 tbs  olive oil
1 avocado sliced
1 tomatoe diced
Chopped lettuce
100grams natural Greek yoghurt
Juice of 1 lemon squeezed
Taco shells or flat bread.
Directions
Place fish in a dish and add lime juice
Add crushed clove of garlic,cumin and oil and a pinch of chilli powder and then season with salt and pepper.
Make sure fish is well coated and put in fridge for 30 minutes. In a bowl add yoghurt and lemon juce and then set aside. On a barbeque or frypan, spray with a little oil and cook fish for 3 minutes on each side. Warm your taco shells or flat bread. Slice fish and place inside shells or bread. Add avocado, fresh tomato, lettuce or any fresh vegetables that you love and drizzle with your yoghurt and lemon mix.

Steamed Fish with Ginger and Chilli
4 fresh fish WA MARKET FRESH fish fillets
2cm piece of ginger finely grated
2 tbs tamari
2 cloves garlic chopped
¼ tsp sesame oil
Chopped spring onion
1 long red chilli, seeds removed and finely chopped
Teamed Asian greens
Directions
Combine grated ginger, tamari sauce, garlic and sesame oil into a bowl.
Add fish and toss to coat. Cover and refrigerate for 30 minutes.
Once fish has been marinated, place in alfoil parcels and top with spring onions and chilli. Fold one side of foil over the other then fold ends tightly. Place parcels on oven tray.
Cook in moderate oven, about 180 degrees celcius for roughly 20 minutes or until fish is beautifully cooked. 
Serve with your freshest salad, crusty bread and a glass of WA's finest white wine.

Wasabi and Lime Fish Kebabs
Ingredients

Approximately 300 grams fresh fish fillet cut into bite size cubes
3 small zucchini cut into bite size cubes
1 red pepper cut into bite size chunks
Juice of two limes
1 tbs wasabi paste
1 tbs tamari

Directions

Soak 8 bamboo skewers in cold water for ½ hour.
Thread fish, zucchini and red pepper onto skewers.
Mix together the lime juice, wasabi and tamari and brush onto your skewers.
Cook the skewers under a hot grill or on a barbeque.
Make sure you cook them to your liking!!!
Brush with remaining marinade and then serve with salad vegetables.
